This stew was inspired by the Chipotle Black Bean and Quinoa Crock-Pot Stew from Tasty Yummies, I did not have dried black beans, red onion, chipotle peppers or a crock-pot…so I made a few changes.
- 1 can black beans
- 1 small yellow onion, diced
- 1/2 cup uncooked quinoa
- 1 can organic chopped tomatoes
- 1 tsp minced garlic
- 1/2 tsp minced chili
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1 cinnamon stick
- 1 tsp chili powder
- 1/2 tsp coriander powder
- 1/2 tsp hot paprika powder
- a bunch of (frozen) coriander
- 3 cups water
- salt & pepper
Added all the ingredients to my Le Creuset cast iron casserole, stirred well and brought to the boil. Let it all simmer for about an hour (as the beans were ready cooked in the can the cooking time could be cut drastically).
