Coconut rice

Salmon, veg and rice was on today’s menu, and when I found this Brown Coconut Rice Recipe I knew this had to be the twist I was looking for.

    1/2 cup brown rice
    1/2 cupcoconut milk
    1/2 cup coconut water
    1 tbsp shredded coconut
    1/4 tsp salt
    1 tbsp coconut oil

Add the oil to the pan, make sure it covers the bottom of the pan. Add the ingredients, stirr well and bring to the boil. Stirr again, cover with a lid and simmer till rice is done (read on the package how long your rice needs). When done, turn the heat off the plate, but let it sit on the heated surface for about 10 minutes before stirring through with a fork.

Today thhis rice was served with oven baked salmon and steamed broccoli.
