Apple pie

Ever since I found this recipe on Spoonful of Sugar Free I knew I had to make it. Apple pie is one of my favourite desserts/sweets. To suite what was in the cupboard and to only make two small desserts I had to make some changes.

    Crust
    1/2 cup hazelnut meal (ground hazelnuts)
    1 soft date
    2 tsp water
    1/4 tsp ground cinnamon
    1/4 tsp vanilla powder
    Pinch of salt

Run the nuts in a small food processor, add the rest of the ingredients and mix well. Grease two small ovenproof dishes with coconut oil, spread the nut mixture evenly in the bottom of the dishes. Bake at 180degC for 10 minutes.

    Filling
    2 sweet apples, diced
    2 tsp water
    1/4 tsp cinnamon

Dice the apples (peel if you prefer), mix in the cinnamon and water, make sure all the apple pieces are covered. Fill the apples on top of the nutty crust, add a lid and bake at 150degC until apples are soft, approximately 40 minutes. Remove the lid, increase the temperature and bake for about 10 more minutes.

Serve with whipped cream.
