Strawberry Basil Almond Flour Muffins

Yet again I’ve tried a recipe from Tasty Yummies!. The recipes are so straight forward and even sound delicious before you’ve even smelled them baking og set your teeth in them.

This recipe 
makes 12 small muffins

    2 large eggs

    1/4 cup agave nectar
    1/4 cup coconut oil, melted
    2 teaspoons vanilla extract
    2 1/4 cups almond flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup fresh strawberries, hulled and roughly chopped
    1/4 cup fresh basil, finely chopped

I was lazy and used my food processor. First whisking the eggs, then adding agave, oil and vanilla – mixed again. Added the flour, baking soda and salt, whisked till well mixed. At the end the strawberries and basil was folded in carefully. Batter was then divided into the twelve muffin cups (rather a cupcake size), and baked in the oven at 170degC for 25 minutes. Let them cool slightly in the pan before transferring them to a wired rack to cool further.
