Spoonful of Sugar Free is one of my favourite bogs for inspiration, all the recipes I’ve tried from there have been wonderful! This whipped cream (bottom of page) goes well with both these pancakes and the Apple pie from yesterday.
- 1 can of full fat organic coconut milk (cold from the fridge)
1 tsp cinnamon
1/4 tsp vanilla
Take the can of coconut milk from the fridge, do not shake. Scoop out the cream at the top of the can, leave the coconut water behind (save this to make coconut rice). Whisk in the cinnamon and vanilla, voila; ready to serve!!
