Warm quinoa and black bean salad

When I arrived home late to an empty house after my work travels today, I was in desperate need of some quick and healthy comfort food, my stomach was not happy after 24 hours of ‘airport food’. I had some beans, quinoa and a few veg… This is what I did for one large portion:

    1/2 small yellow onion
    1 stalk of celery
    1 small red pepper
    1 dried chipotle peppers (chillies)
    1 cinnamon stick
    A small handful of fresh coriander
    1/4 tsp ground coriander
    1/4 tsp ground cumin
    Salt & pepper
    1/3 cup quinoa (uncooked)
    2/3 cup water

Chop the onion and fry in some oil on medium heat until soft. Add the chopped celery and red pepper, stirr well. Add the spices, cook for a minute while stirring. Add the quinoa, let it be coated with the spices before adding the water. Let it simmer for 20 minutes (fish out the cinnamon stick and the chipotle and) serve the salad warm!
