Recipe inspired by Jamie Olivers Perfect Roast Chicken
- One large chicken (mine was a 2.6 kg free range chick)
1 unpeeled carrot
2 stalks celery
1 bulb of garlic
Salt and pepper
Preheat the oven to 200C. Wash and roughly chop the carrot, celery, garlic and onion and put in the bottom of a roasting pan. Rub the chicken in plenty of salt and pepper. Use a sharp knife to punch holes in the lemon, cook it for 30 seconds (this brings out flavour) and stuff it inside the cavity of the chicken.
Cook the chicken for approximately 2 hours (weight dependent). Serve with your preferred side dishes, for example the quinoa salad I posted yesterday.
