Our celebratory breakfast Maundy Thursdays was a Flourless Berry Puffed Pancake from Spoonful of Sugar Free
- 1 teaspoon coconut oil
2 cups fresh or frozen berries
4 eggs, separated
1 teaspoon vanilla
1/2 teaspoon cinnamon
Preheat the oven to 200C. Add the oil and the berries to a pan and cook for a few minutes. Whisk the eggwhites till stiff. In a separate bowl, whisk the egg yolks, vanilla and cinnamon. Fold the yolks carefully into the eggehites until combined. Pour the egg mixture evenly over the cooked berries. Fry for a couple of minutes, then put the pan in the oven and cook for 10 minutes, until golden brown and puffy.
Serve with berry side up as is or with cream of choice. I cannot wait to taste these again with some Whipped Coconut Cinnamon Cream
