Steak & ale casserole

I’ve made this steak & ale casserole for years. It reminds me of family time at the cabin, Easter holidays, a real comfort food!! The kitchen fills with amazing aromas as soon as you start frying the meat, and it explodes when adding the ale. Thanks to Jamie Oliver for adding a similar recipe to his cookbooks (Steak & Guinness pie).

    1 kg steak, cubed
    Salt & pepper
    2-3 tbsp gluten free flour
    1 large onion
    4 sticks of celery
    1 large (or 2 small) carrots
    1 large parsnip
    2-3 bay leaves
    2 tsp oregano
    Can of chopped tomatoes
    5 dl dark ale (Newcastle Brown Ale/ Budvar Dark lager etc)

Peel and roughly chop the vegetables. I put the onions in a small bowl and the rest of the vegetables in another bowl. Sprinkle the meat generously with salt and pepper and cover with flour. Heat oil in a large cast iron pan, fry the meat in batches. When the meat is fried, add the onions, stir and fry for about a minute. Add the rest of the vegetables, stir well and fry for another 4-5 minutes. Add the tomatoes and ale, bring to the boil and turn down the heat. Let it simmer for about 2 hrs until the meat is tender.

Serve with sweet potato mash.
