Roast vegetable pizza

Another pizza variation. Nutritional yeast flakes are here used as a cheese substitute – oh so yummy!! I cooked this one in a pie dish for simplicity and it worked a treat!

    Base
    1 cup garbanzo bean flour
    1 1/2 cups cold water
    Salt
    Pepper

Mix ingredients together. Let sit in the fridge until the pan is hot. Grease a pie dish with some oil, put it in the oven and heat both oven and dish to 200degC. When it’s hot, add 1 tbsp oil, heat for 30 sec before adding the batter. Fry the base for 15-20 minutes (till it’s golden brown).

    Topping
    Sun dried tomato paste
    Chopped onion
    Sliced mushrooms
    Chopped red peppers
    Sprinkle of Nutritional Yeast Flakes
    Sprinkle of olive oil

Spread the tomatoes onto the pre-cooked base. Add the rest of the vegetables and then sprinkle it all with nutritional yeast flakes and a bit of olive oil. Return it to the oven and cook for another 10 minutes, till the vegetables are al dente and a yummy smell spreads in the kitchen!

Enjoy with side salad of choice or on its own.
