Simple is the key word for this soup! So quick, so simple and yet very tasty!
1 small onion, finely chopped
1 tsp minced garlic
1/2 tsp minced ginger
1/4 tsp minced chilli
2 tbsp chopped sun dried tomatoes
2 tbsp tomato purée
500 g can organic chopped tomatoes
6 dl vegetable stock (sugar- and yeast-free)
Pepper to taste
(if not having eggs with this soup, add lentils to get some proteins)
Fry the Onion on low heat till soft. Add the garlic, ginger, chilli, sun dried tomatoes and tomato purée, store and let fry for about a minute. Then add the chopped tomatoes and the vegetable stock. Let it simmer until your eggs are boiled (or if you choose the lentil option, add the lentils together with the liquids and simmer till warm through)!

Finely sliced spring onion
Hard boiled eggs
Serve soup with a hard boiled egg and a sprinkle of coriander and spring onions. Have a bottle of Tabasco available for the ones who prefer the soup more spicy!
