Banana Chocolate Cream Pie

This amazing recipe is from my new favourite blog: The Spunky Coconut
As always, I didn’t have all the ingredients (and I didn’t read the recipe well…), so I made a few changes.

    Crust
    3 tbsp flax seed meal
    1/3 cup plus 2 tbsp applesauce
    1 tbsp apple cider vinegar
    1/4 tsp pure vanilla extract
    1 tbsp agave nectar
    1/4 cup coconut oil, liquified
    1 cup hazlenut meal flour (hazelnuts that have been pureed in the
    food processor)
    1/2 cup coconut flour
    1 tsp baking soda
    1 tsp baking powder

Mix together the flax meal, apple sauce, vinegar, vanilla, agave nectar and the oil. Add the rest of the ingredients and mix well. Spread into a pie pan. Bake in the oven at 180degC for 12-14 minutes. Let the crust cool completely before filling it.

    Filling
    8 pitted dates
    3 ripe peeled bananas
    2 tsp vanilla extract
    1/4 cup + 2 tbsp cocoa powder
    1/4 cup coconut oil, liquified

Mix it all in a blender or food processor till smooth. Make sure you don’t have any date chunks.

Add the filling to the crust and let it sit in the fridge over night before enjoying (or put it in the freezer for a couple of hours if you cannot wait).
