Gluten free waffles for the “Waffle day”

Today is the waffle day, don’t know if this is a norwegian phenomenon or if it’s international…but still a good excuse to eat waffles for breakfast (and serve leftovers as coffee treat when friends came over later in the day)! I found this tempting recipe by Ladycakes via Fork and Beans and decided that these would be my waffleday contribution this year. They were delicious, so I’m sure they’ll be served quite frequently as my husband is quite fond of waffles.

    Waffles
    1 1/2 cups gluten free flour blend (I used Bob’s Red Mill All Purpose Baking Flour)
    1/2 cup gluten free ground oat meal
    ½ cup flax meal
    1/4 tsp salt
    1 tbsp baking powder
    1/2 tsp Xanthan gum
    3 cups home made almond milk
    2 tbsp coconut oil
    1 tbsp pure vanilla extract

I did this very very simple, chucked all the ingredients into the blender and let is go for a few minutes. Stopped it and scraped the edges well with a spatula, before blending for another few minutes. I let it sit a while on the windowsill before making the waffles (took about 1/2 dl batter pr waffle). Yummy… So yummy that I didn’t manage to take a picture…
