Spicy chickpea burgers

I’m giving spicy bean burgers another go. The last ones I made were ok, but not WOW, I need them to be WOW!!
For ingredients in norwegian, see below the picture

    Spicy chickpea burgers
    Two cans of chickpeas
    One large carrot
    One large spring onion
    2 tbsp garbanzo bean flour
    2 tbsp olive oil
    1/2 tsp minced ginger
    1/2 tsp minced garlic
    1/4 tsp minced chilli
    1/4 tsp ground chili
    1/2 tsp ground cummin
    1/2 tsp ground coriander
    1/2 tsp ground hot paprika
    Salt and pepper

Rinse and drain the chickpeas well, mash them with a fork or a masher. Peel and grate the carrot. Finely chop the spring onion. Mix these ingredients well. Add the spices and mix again before adding the oil and the flour last. If the mixture is too dry, add some more oil, if to sticky, adjust with flour till you can easily make them into patties with your hands. I got 6 large patties from this recipe. Fry in some oil.

Today I served these with a mixed green leaf salad, half an avocado and some cherry tomatoes.

I found that the carrots made the patties more juicy than the previous ones! The spice mixture I found balanced with a small (but not major) kick, the smokiness from the hot paprika adds the little extra I think!! Next time I’ll try to find something to make them crunchier on the outside while softer in the middle…
