Vegetable wok

A simple wok for one was today’s dinner choice!

    1/4 Cabbage (the light fresh ones in season)
    1 carrot
    1-2 spring onions
    1/4 tsp minced chilli
    1/4 tsp minced garlic
    1/4 tsp minced ginger
    1 tsp ketjap manis (sweet soy sauce)
    2 tsp Soy sauce

Cut the cabbage in strips, peel carrot and cut into thin strips (I use the vegetable peeler) and finely chop the spring onion. Heat some oil in a pan, add the chilli, garlic and ginger first, then add the vegetables. Fry for about a minute while stirring. Add the soy sauce and ketjap. Let the mixture simmer for a couple of minutes and voila…dinner in less than ten minutes!!

This meal will be chased by a protein filled smoothie when I get back from my evening walk… to make it a properly balanced meal, add some beans, lentils, fish or meat.
