Garbanzo bean pancakes

Today’s breakfast consists of garbanzo bean pancakes, olive tepanade and salad.

    Pancakes
    1 part garbanzo bean flour (chickpea flour)
    2 parts water

Mix the ingredients, add spices if you’d like, and let the mixture swell for about 1/2 hr. Fry in a pan, approx 5 mins each side (depends on thickness).

    Tepanade
    Handful black pitted olives
    1 tbsp sundried tomatoes
    Some oil
    Salt and pepper

Mix in a food processor till smooth. Check if it has the flavour you’d like, add more olives if too tomatoey, more oil if not smooth enough, and so on…

    Salad
    Cucumber
    Cherry tomatoes
    Avocado
    Pear
