Salmon taco

This Friday night my sister-in-law came for dinner. The hubby had requested taco and wanted to try something new: salmon rather than beef or chicken…

Sprinkle salmon fillets with taco spice mix and some oil. Bake in the oven for 15-20 minutes. (I use frozen salmon fillets).

    Taco spice mix
    1/2 tsp salt
    2 tsp ground cumin
    1/2 tsp ground coriander
    1 tsp ground hot paprika
    1/2 tsp ground chilli
    1/2 tsp ground garlic (powder)
    Pinch of pepper

This was served with

    Maize taco tubs
    Guacamole
    Chopped red pepper
    Chopped onion
    Halved cherry tomatoes
    Sliced mushrooms
    Medium Salsa sauce
    Jalapeno peppers
    Ruccola
    Lemon to squeeze on the fish
    Guacamole
    1 ripe avocado
    2 cherry tomatoes
    A squeeze of lemon
    Salt and pepper

Run it all in a food processor till smooth.
