Bean burgers with carrot & parsnip “pasta”

I’ve had a few days in Italy, feasting on dairy-, gluten- and sugar-rich diet, accompanied by lovely Italian wine and strong coffee… Needless to say, my system had a complete breakdown and today I’ve started a detox! My diet and therefore the food presented here in the next few weeks will be meat-, gluten-, dairy-, sugar- and alcohol-free!

Black bean burgers

    Can of Black Beans
    1/4 onion finely chopped
    1 tbsp olive oil
    1 egg
    2 tbsp garbanzo bean flour

    1 tsp oregano
    1/2 tsp ground chilli
    Salt & pepper

Mash the beans with a fork or a masher. Add the onion, egg, oil and flour and mix well. Form into burgers and sprinkle spices on each side of the burgers. Fry in a pan with some oil.

Raw vegetable “pasta”

    2 carrots
    1 parsnip
    2 tsp green pesto

Peel the carrots and parsnip and rinse. To make pasta, continue using the vegetable peeler to make thin slices of carrot and parsnip. Mix in a bowl and add pesto to taste.
