Roasted vegetables and portebello mushroom

Anything roasted I find is an easy way out, and for dinner for one, roasted food is even better! Today I therefore went for this option.

    One small sweet potato
    One parsnip
    1/2 red pepper

Peel the vegetables and cut them into cubes. Grease an ovenproof dish and add the vegetables. Add salt and pepper. For some more excitement, add some goats cheese to the top, and roast the vegetables in the oven at 180degC until tender and golden.

    Portebello mushroom

Roast a Portebello mushroom with some salt and pepper.

Today I served these vegetables with some choritzo sausage!!
