Chicken with parsnip puré

Dinner for one with no leftovers!!

    One chicken fillet
    Nando’s Piri Piri sauce
    Salt and pepper

Glace the chicken in piri piri sauce, salt and pepper. Fry it in a frying pan or bake in the oven till cooked through.

    100 g parsnip
    5 dl vegetable stock

Peel the parsnip and cut it into cubes, boil in the vegetable stock until tender. Pour off most of the liquid and mash the vegetables into a pure. Add butter or other spices if you’d like.

Make it look pretty on a plate and enjoy in front of the telly…
