My dear husband had made supper which was ready when I arrived home after a long day at the office. On the menu: Chili con Pollo 🙂
- 400g minced chicken
1/2 onion finely chopped
1 ts minced garlic
1 ts minced chillies
1 can red kidney beans or chili beans
1 can chopped tomatoes
4 tbs sweetcorn
1 ts dried oregano
Salt & pepper
Serve with rice or nachos and a leafy salad.
Fry the onions in some oil on low heat till soft, add the garlic and chillies and stir. Turn up the heat slightly when adding the chicken, make sure it’s cooked through, but don’t leave it till it’s dry. Add the tomatoes, beans and spices. Add the sweet corn at the end.
