Simple omelett as evening ‘snack’

Today we had a big and late lunch at a thai restaurant, so no dinner to blog about. A small meal in the evening was still necessary, so I whipped up (always wanted to say that đŸ˜‰ ) a simple omelett.

    Four eggs
    Salt and pepper
    Two-three sundried tomatoes
    Oil from the sundried tomatoes

Whisk the eggs, salt and pepper. Chop the tomatoes. Fry it all in the oil. Serve with bread or salad of choice!
