I returned home late tonight and we wanted something quick and healthy. This morning I got a couple of portion fillets of salmon from the freezer, a great start for a quick meal. Lentiles are also both quick and healthy, not to mention yummy!!
For two people
One portion of salmon fillet each
Drissle of vegetable oil
Sprinkle of lemonpepper and salt
Grease a small ovenproof dish with oil. Add the fish and sprinkle it with lemonpepper and salt. Cook in oven at 180 degC for approximately 15-20 mins.
1/4 onion (finely chopped)
1/2 ts minced garlic
1/2 red pepper (cubes)
3 cm courgette (cubes)
Organic pre-cooked red lentiles
Sqeeze of lemon
Salt & pepper
While the fish is in the oven: Slowly heat the onion and garlic in a pan. When the onion is soft, add the red pepper and courgettes, cook for a couple of minutes before adding the lentiles. Add salt and pepper to taste. Leave on low heat until warmed through. Before serving add the chopped parsley and squeeze of lemon.
