Today I was tempted by the recipe by Carol guest writer on Simply sugar and gluten free! It tasted heavenly. I did have to change a few things as I didn’t have all the ingredients. Here is my attempt:
- Crust
1 cup garbanzo bean flour
2 tsp ground cumin
1 tsp fine sea salt
½ tsp ground black pepper
3 spring onions, chopped
2 tsp minced garlic
1½ cups cold water
1 tbsp olive oil
Hummus
1 can chickpeas, drained
1 tbsp lemon juice
4 tbsp cold water
2 tbsp olive oil
3 tsp minced garlic
1 tsp fine sea salt
1/2 tsp ground hot paprika
6 dashes hot sauce (Tabasco)
Topping
2 cups mixed lettuce – finely shredded
8 cherry tomatoes, quartered
10 pitted kalamata olives, quartered
Wipe a 12 inch pan with olive oil and place in the oven and preheat both the oven and pan to 210 degrees C.
Prepare the batter for the crust by combining all the ingredients, beat until smooth. Refrigerate until the oven comes to temperature.
Once the oven reaches 210 degrees C, carefully pour 1 tablespoon of olive oil into the hot pan while it is still in the oven, let the oil heat for about 30 seconds. Carefully remove the pan from the oven, pour in the batter carefully (it will sizzle), return to the oven and cook for 20 minutes or until the top of the crust is firm and starts to brown.
To prepare the hummus, you add all the ingredients to a food processor and mix until smooth. Add more oil if it’s too dry.
When the crust is cooked, transfer it carefully to a serving plate. Spread the hummus over it and top with salad, tomatoes and olives.

That sounds really good! Got my gears spinning. Friday is often pizza day….
